This is a long lost tea time treat - jammy buttery sponge cake rolled in coconut.

 Ingrediants

125g (4oz) butter
125g (4oz) caster sugar
2 eggs
125g (4oz) self-raising flour
1 tsp warm water
5 tbsp strawberry jam
60g (2oz) desiccated coconut
8 glacé cherries
8 dariole moulds, buttered and floured

  1. Preheat your oven to 180°C or gas mark 4
  2. Beat the butter until soft, and then add the sugar and mix together until the butter and sugar are to a light and fluffy creamed consistency.
  3. Beat in the eggs and add them to the butter and cream.
  4. Gently fold in the sifted flour and 1tbswarm water being careful not to overwork the mixture.
  5. Divide the mixture evenly between the dariole moulds and make sure you clean off any spillages from the moulds.
  6. Put the moulds on a baking tray and bake in the centre of the oven for around 20 minutes.
  7. Leave to cool in the tins for 10 minutes, and carefully ease cakes out with a palette knife and leave to cool on a wire rack.
  8. Heat the jam and 1-2 tbs water in a small pan. Bring to the boil for 1 minute and then remove from the heat.
  9. Put a cake on a fork and brush it with the hot jam making sure you do not brush the bottom with jam.
  10. Roll the cake on the coconut on a plate. Decorate with a cherry and repeat steps 9 and 10 with each cake.

Coconut Castle Puddings is one of my family's favorite deserts! My father just loves them. My Great Aunt Rose used to make them but sadly sadly now days she is unable to bake like she used to, I decided to take up the challenge! As you can see these coconut castles are quick and easy to make and are great if you want to get the kids into baking as there are lots of messy and fun stanges where you can include them (if you dare!). The only real drawback is trying to source the 8 dariole moulds, But you can get these from most good cook shops and even amazon.

They even taste fantastic with custard and take me back to my school days when I used to be treated to this at school dinners with lost of custard with the skin and lumps in it! But please don't let that put you off as I am sure your cooking is better than the school cooks!

The key ingredient to this dish is coconut. This Coconut Castle Puddings is surely going to make you popular amongst your friends once you treat them to some.
